India Pale Ale 7.5% ABV

Antinous is one of our cross-continental IPAs. It is hopped generously with a blend of American and Australian hops, including Citra® and Galaxy®. Double dry hopped and crafted with German malted barley, specialty British malt, and our house ale yeast, this IPA is complex, juicy, and incredibly drinkable. We taste notes of pineapple, mango, orange sorbet, papaya, and light pine finish. It is named after Antinous (111 – 130 CE), who was a Greek youth and the lover of the Roman emperor Hadrian. Following his premature death, Antinous was deified by Hadrian, and he was worshipped in areas of the Roman west, such as Greece and Egypt. Due to his relationship with Hadrian, Antinous has become a symbol of homosexuality.

Robust Porter, 6.5% ABV

Arminius is our robust porter. Crafted with British malted barley, a complex assortment of British and German specialty malts, classic American hops, and our ale yeast, it is bold, clean, and complex. We taste notes of dark chocolate fudge, chocolate covered espresso beans, caramel, and cacao powder. It is named after Arminius (18 BCE – 17 CE), who was a Germanic chieftain of the Cherusci tribe, and he is known for commanding the Germanic forces during the Massacre of Teutoburg Forest in 9 CE. This event was considered one of Rome’s greatest defeats, with three legions having been destroyed, and was the reason why Augustus exclaimed: “Varus, Varus, give me back my legions!”

India Pale Ale 7.5% ABV

Artemisia is one of our cross-continental IPAs. It is hopped generously with our hand-selected lot of both Citra® hops from the United States and Nectaron® hops from New Zealand. Crafted with American malted barley, white wheat, specialty British malt, and our house ale yeast, this ale is soft, complex, and refreshing. We taste notes of candy peach rings, passion fruit, orange sorbet, and lemon peel. It is named after Artemisia (lived ~480 BCE), who was the queen of Halicarnassus and an ally of the Persians during the second Persian invasion of Greece. She personally commanded five ships during the invasion and was known for her courage and wisdom.

American IPA 6.7% ABV

Caracalla: DDH is an American India Pale Ale. For this version of Caracalla, we double dry hopped (DDH) it with a blend of American hops, including Citra® and Mosaic®. Crafted with American malted barley and white wheat, a touch of flaked oats, specialty German malts, and our house ale yeast, this ale is soft, juicy, and balanced. We taste notes of dank blueberry, candied orange peel, mango, passion fruit, and a hint of pine. It is named after Caracalla (188 - 217 CE), who was a member of the Severan dynasty, and is known for granting Roman citizenship to all people who lived within the Roman empire. His reign was also marked by domestic and foreign instability, which set the stage for the disastrous 3rd century in Roman history.

Imperial India Pale Ale 7.8% ABV

Catullus is our rotating single hop series of IPAs. In each variation, we use the same malt bill but change the hop variety. This iteration was brewed exclusively with Chinook hops from Smokedown Farm Hops in Sharon, CT. Crafted with American and German malted barley, white wheat, and our house ale yeast, this ale is soft, juicy, and incredibly complex. We taste notes of pineapple, overripe mango, candied orange, and a slight pine finish. It is named after Catullus (84 - 53 BCE), who was a famous poet of the Roman Republic. He influenced other famous Roman poets such as Ovid and Virgil, and his collection of poems continue to influence writers, poets, and artists to this day.

India Pale Ale, 7.0% ABV

Cleopatra is an India Pale Ale celebrating New Zealand hops. Crafted with American malted barley and white wheat, specialty German malts, and our house ale yeast, it is juicy, delicate, and soft. It was hopped generously with a blend of four New Zealand hops, including Nelson Sauvin™ and Riwaka™. We taste notes of gummy bears, papaya, peach, and pineapple. It is named after Cleopatra (69 – 30 BCE), who was the last queen of Ptolemaic Egypt and only Ptolemaic queen to learn Egyptian. She is also known for her relationships with Julius Caesar and Marcus Antonius.

Czech-style Pilsner 5.1% ABV

Crafted with 100% Bohemian floor-malted pilsner malt, a blend of classic noble hops, and our house lager yeast blend. Double-decocted, naturally carbonated, and lagered for over eight weeks. Notes of candied lemon, honey, freshly baked bread, and crackers. Named after Hydna (lived around 480 BCE), who was an Ancient Greek swimmer. She is known for swimming over ten miles in order to sabotage the Persian fleet during the Persian invasion of Greece.

Port Barrel Aged Helles Lager, 5.3% ABV

Julia Domna began as a normal batch ofSappho, our flagship German-style Helles Lager. Building on our knowledge andinsights gained from Faustina the Younger, we decided to age a portion ofSappho in a single tawny port barrel from Portugal. Following a cold and slowprimary fermentation and a six-week lager period in stainless, we transferredSappho to the tawny port barrel. After lagering at 2°C for three months in ourcooler, it was transferred into one of our lagering tanks and blended withfresh, carbonated Sappho. Following another eight weeks of lagering, this lagerhas emerged soft, bright, and extremely complex. Julia Domna represents ourmission of pushing the boundaries of how lager beer can be brewed, fermented,and conditioned.  

This lager is named after Julia Domna(160-217 CE), who was a Syrian-born Roman empress and wife to SeptimiusSeverus. She was awarded many titles during her lifetime, such as “Augusta”,“Mother of the Invincible Camps”, and “Mother of the Senate and of theFatherland”. It is believed that she received the most honorific titles of anyempress in the history of the Roman Empire. She was also the mother ofCaracalla!

TDH Triple IPA 10.0% ABV

Mitsy is a Triple India Pale Ale which is inspired by our other core offerings, notably Cleopatra and Brutus. For this IPA, we triple dry hopped it with a blend of American and New Zealand hop varieties, including Citra® and Nectaron®. The Nectaron® hops used are from our hand-selected lot from New Zealand. Crafted with American malted barley, New England malted white wheat, specialty British and German malts, and our house ale yeast, it is soft, juicy, and incredibly drinkable. It is named after Mitsy Mergy (2010 – 2023), who was a small yet fierce Yorkshire Terrier. Her loving spirit, bold personality, and unwavering loyalty will never be forgotten. She was the best dog a family could have.

Nero: Coconut & Vanilla

Nero: Coconut & Vanilla

Imperial Milk Stout 9.1% ABV

Nero is our rotating imperial milk stout series. For each variation, we utilize the same malt bill but condition the beer on different adjuncts. For this version, we conditioned it on an enormous amount of raw coconut flakes, toasted coconut flakes, and organic Madagascar bourbon vanilla beans. Crafted with American malted barley, a complex assortment of British and German specialty malts, American hops, and our favorite American ale yeast, this stout is decadent, soft, and creamy. We taste notes of coconut cookies, coconut crumb bars, chocolate chip pancakes, and a hint of dark roast coffee. It is named after Nero (37 - 68 CE), who was a Roman emperor and the last emperor in the Julio-Claudian dynasty established by Augustus. He is known for his debauchery, extravagance, and gluttony. There is a famous story of him playing the lyre while the city of Rome burned! While he is known for these vices, he took care of the people of Rome by building public baths, providing food, and by putting on various entertainment.

Nero is our rotating imperial milk stout series. For each variation, we utilize the same malt bill but condition the beer on different adjuncts. For this version, we conditioned it on Sumatra Lintong coffee beans roasted by our friends at Zero Prophet Coffee in Washington, CT. Crafted with American malted barley, a complex assortment of British and German specialty malts, American hops, and our favorite American ale yeast, this stout is decadent, soft, and creamy. We taste notes of freshly brewed espresso, vanilla latte, chocolate covered espresso beans, and milk chocolate. It is named after Nero (37 - 68 CE), who was a Roman emperor and the last emperor in the Julio-Claudian dynasty established by Augustus. He is known for his debauchery, extravagance, and gluttony. There is a famous story of him playing the lyre while the city of Rome burned! Fruited Kettle Sour 7.5% ABV

Ovidius is our fruited kettle sour series brewed with a touch of lactose*. This iteration was conditioned on massive amounts of pink guava, pineapple, and mango purée. Crafted with American malted barley, malted oats, flaked oats, American hops, milk sugar, and our favorite Lactobacillus culture, this sour is soft, creamy, and tart. We taste notes of guava jam, mimosas, pineapple gelato, and mango marshmallows. It is named after Ovidius (43 BCE - 17 CE), who was a Roman poet and lived during the reign of Augustus.

Wheat Farmhouse Ale, 6.8% ABV

Caligula is one of our Wheat Cerealia™ Ales. Crafted with malted winter white wheat, Cascade hops from Smokedown Farm Hops in Sharon, CT, and our house mixed culture, it is soft, complex, and tart. Triple decocted and naturally carbonated, we taste notes of pear, blackberry, lemon/lime zest, sourdough bread, and cookie dough. It is named after Caligula (12 – 41 CE), who was Rome’s third emperor and known for his reign of tyranny. While hated by the senate, he was loved by the people of Rome due to the many public games he put on.
